Heat a pan or wok on high heat until smoking. Add oil to the pan, and garlic and chilli for for 15 seconds then add beef mince until it is browned all over.
Next, add soy sauce, oyster sauce, fish sauce, sugar, MSG, shallots and Thai basil. Stir fry for 1-2 minutes until fragrant. Add the sugar snaps (if using) and cook for a further 2 minutes.
A must-have is the fried egg for this dish! The egg adds a beautiful contrast to the sweet and salty tastes, making everything even better. If you have a runny egg, it's more delicious when the yolk runs through the rice.
