AKA "Poor Mans Burnt Ends"

Beef lovers rejoice! You can make delicious burnt ends without having to spend a fortune on brisket. Chuck roast is a great, affordable cut of meat for making burnt ends.

Making burnt ends doesn't have to be expensive. In fact, you can make delicious burnt ends using a chuck roast. This is a great, affordable cut of meat that will yield tasty burnt ends.

There are a few different ways to cook the chuck roast for making burnt ends. You can roast it in the oven, cook it in a slow cooker, or smoke it. I prefer to smoke it because I think it gives the meat the best flavor. I decided that the burnt ends needed some friends as it I would feel too guilty to just eat them without pairing them with anything to enhance this beautiful cut of meat. I decided to go with Baos with some bean sprouts and jalapenos for a bit of kick. There are so many combinations you can do with baos, but trying to use what you have in the fridge and get creative is fun! With leftover baos in the freezer ( really cheap at any Asian groceries ), you can use any sauce you like to add to the baos but I didn't want to waste the beautiful butter and BBQ sauce that was rendering the meat in the pan so I used this as my finishing sauce!

Method

You can cut the chuck roast into small pieces, season it with your favorite spices, and cook it in the smoker, but I chose to do it wholly and get it to 165F, then slice into cubes, mix with butter and BBQ sauce in an aluminium pan, then back in for till 200F. This process took me 8 hours for a 1kg piece of chuck.

Ingredients:

  • 1 chuck roast
  • 1 bottle of your favorite BBQ sauce
  • Beef Rub
  • Butter
  • Baos
  • Bean sprout
  • Coriander
  • Jalapeños
